The Kufri Pukhraj variety of potatoes are medium to large in size and with a slightly lumpy shape. Light brown to gold in colour, these potatoes have a smooth skin and a wax-like texture. The skin is also known to have a few shallow eyes with small brown spots. After cooking, Kufri Pukhraj potatoes have a tender texture with a mild and earthy flavour.
The Kufri Jyoti is one of the popular varieties of Potatoes. This variety is said to be easy to cook and has a waxy texture. It has a mild flavour and is considered to be suitable for instant flakes and chips. Their flesh may be white or may also be coloured like the skin.
Kufri Bahar is a variety of potatoes which is white in colour and large, round-oval in shape. The skin of the Kufri Bahar variety is smooth and it has medium deep eyes with white flesh. The areas of adaptability for this variety include Haryana, Himachal Pradesh, Jammu and Kashmir and Uttar Pradesh.

Kufri Chandramukhi is an early variety of potatoes. It matures in around 80-90 days. The tuber of Kufri Changramukhi is white, large, smooth, oval and flattened. It has white skin, fleet eyes and white flesh. This variety of potatoes is said to yield around 100 quintals per acre.
Kufri Khyati is a high yielding variety of potatoes. Kufri Khyati has moderate resistance to late blight. This variety is cultivated in the plains of India. Kufri Khyati variety of potatoes generally yields higher than the other early maturing cultivars.
